Cajun Coleslaw - serves 6
1 medium cabbage, shredded
2 medium white onions, thinly sliced
1 tsp Tabasco sauce
1/4 cup diced red bell pepper
1/4 cup chopped fresh parsley
1 cup mayonnaise
2 tsp celery seed
2 tbsp white vinegar
1 tbsp sugar
Salt and pepper to taste
Place cabbage and onions in a large bowl; add Tabasco sauce and toss. Let sit
about 20 to 30 minutes. Add the bell pepper and parsley.
In a small bowl, combine remaining ingredients; mix well and pour over the
cabbage mixture. Toss to coat well; cover and chill for 1 hour before serving.
